Instructions 📃

Heat olive oil in a skillet and add garlic and red onion.
Cook until softened and fragrant.
Stir lentils into the pan and season with salt and black pepper.
Crack eggs into a separate pan and cook to your liking.
Add spinach to the lentil mixture and cook until just wilted.
Top the lentil bowl with cooked eggs before serving.
