This recipe comes together easily and provides around 500 calories, with a balance of protein, fiber, and fats to help you feel satisfied and clear-headed until your next meal.
Ingredients 🛍️
Firm tofu
Leafy greens (spinach or kale)
Olive oil
Pumpkin seeds or sunflower seeds
Turmeric
Salt
Black pepper
Instructions 📃
Pat tofu dry and crumble it into bite-sized pieces.
Heat olive oil in a pan over medium heat.
Add tofu and season with turmeric, salt, and black pepper.
Cook for 5 to 7 minutes, stirring occasionally.
Add greens and cook until just wilted.
Toast seeds in a dry pan until lightly golden.
Top the scramble with toasted seeds before serving.
